REQUIREMENTS: Full sun and well drained soil. Protect from harsh winters by mulching with shredded bark. Cut the plant back to the ground in the spring.

DESCRIPTION: Upright, branched stems and linear, smooth leaves with a mint-anise flavour like licorice.

CULINARY: Harvest fresh tips during the growing season. Tarragon is a favourite seasoning for fish, omelets, poultry and seafood. Use fresh of dried in salads, vinegars, cheeses, sauces, salad dressings, soups and rice dishes.
